Have to begin with this one from 1955. I think this is the first example in film history of POV action. Olivier acknowledges and addresses the camera directly, even reaching out his hand to drag the camera with him as he moves. Nobody dared to play Richard III for years after this production.

The witch scene from Kurosawa's Throne of Blood - his version of Macbeth - has influenced pretty much every production of Macbeth since. Sadly, I can't find a clip of that scene, but you can see a bit of it here in this trailer.
